Well, at the moment it is also "relative" cold at Alexandria. This is the northern air from the mediterranean sea.

We don't wanna get you into trouble but you might buy some already ready to go PCB-metal detector board.
Or you check out old broken electronic devices for needed parts.
I would try to built some already waterproofed metal detector when you like to dive anyway.
If you have some connections you can drive to Cairo and order some metal detector from Turkey -
this is the closest country. Or you can get one from the egypt military (demining-detector).
But maybe this only works for you with really good connections and enough bakshish.

Why don't you build either Surf-PI, Baracuda, or Minipulse Plus?
Any of these will work if built on stripboard -> https://en.wikipedia.org/wiki/Stripboard
Then you don't need a PCB.

If you can make PCBs yourself, then here's a single-sided version of the Surf-PI ->

Highly recommended to build a kit, instead of trying to find parts and trying to make a board yourself.
-Kit is built and tested, pcb flaws are minimal
-Easier to debug when instructions are followed step by step
-The components are known to be OK
