About 0.5... 1cm is OK if you use foil for shielding
If you use graphite spray then a thin line 2mm on the coil housing is OK

The size of the gap in the shield is not dependent on the number of turns. It's just important that there is a gap. Otherwise the shield will act a shorted-turn, and the coil will be unusable.

Which is the best DD or Concentric

If you have to make one... DD is much more easy to do... null and shield the right way. Concentric are good for skilled homebrewers only.
